Raspberry yoghurt smoothie
Serves four
- 150g yoghurt
- 50g oats
- 300g frozen raspberries
- 50g brown sugar
- 750ml whole milk
- One sprig of fresh mint
Add all the ingredients besides the mint to the mixer and blend together. Afterwards, separate the mint leaves from the stem and add them. It's best to pour the drink into a glass and place the decorative leaves on top. Fresh raspberries can also be an impressive addition to this thick drink. Spinach salad with candied almonds and lemon vinaigrette
- 1 tbsp Dijon mustard
- 0.5 tsp finely-chopped garlic
- 2 tbsp lemon juice
- 1 tsp white wine vinegar
- 1 tsp sugar
- 0.5 cups olive oil
- 125g baby spinach
- 0.5 cups dried cranberries
- 100g fresh goats cheese
- 80g sugar
- 2 tbsp water
- 1 tsp lemon juice
- 100g roughly chopped almonds
Pre-heat the oven to 120°C and roll out a sheet of oiled baking paper on the work surface. Heat the almonds in the oven. Boil the sugar, water and lemon juice until the sugar is golden brown. Stir the pot occasionally. Stir the almonds into the caramel and distribute evenly onto prepared foil to cool down before chopping them roughly.
For the salad, add the mustard and garlic to a medium-sized bowl and whisk them slowly with the lemon juice, vinegar and sugar into a delicious dressing. Then, mix the olive oil, spinach, candied almonds, cranberries and goats cheese together in a large bowl. Add the vinegar shortly before serving.
Pizza swirls
Serves four people
- 2 packs Pizza dough, refrigerated
- 300g grated cheese
- 22 Slices of Tyrolean Speck
- 1 bunch of marjoram
- 2 tbsp olive oil
- 1 tin of tomato sugo
- 1 tbsp honey
- 1 lemon
- Salt/pepper
Lightly cover the rolled-out pizza base with the tomato sugo and then add the Tyrolean Speck, grated cheese and marjoram. Next, mould the base into a roll and cut into slices the same thickness as your thumb. The pizza swirls must bake for 12 minutes in an oven pre-heated to 185°C. You can use the remaining tomato sugo, olive oil, honey, lemon juice, salt and pepper to make a simple sauce.
Banana muffins
Serves 12
- 300g banana
- 250g flour
- 1 pinch Salt
- 100g sugar
- 100g butter
- 2 eggs
- 150ml buttermilk
- 100g double-cream cheese
- 100g pouring cream
- Slightly runny honey
Pre-heat the oven to 180°C and mash the peeled bananas with a fork. Mix the baking powder, salt and sugar together. Next, blend the butter with the eggs, buttermilk and bananas and then fold in the flour mixture. Place the resulting dough in the hollows of the muffin tray or into paper moulds. Make sure that the moulds are not too full, as the dough will rise in the oven. Bake for 20-25 minutes. For the topping, stir the cream cheese in with the thick pouring cream and sweeten with honey. To top it off, spray the cream on the muffins and decorate with sugar, if you wish.
